They say that 4,000 new ramen shops pop up in Japan annually and another 4,000 close their doors. This is Japan, when it comes to food it’s super competitive.
Just to get to a place where you can open your own shop takes perseverance. One of my co-worker at Itto grinds six days a week working 13 hour days. On his days off he has a pop up running for lunch in the heart of Tokyo. Being surrounded by people who desire to offer amazing ramen and their passion for perfection drives you to strive to do better. Keep fighting the good fight Ogawa-san.
